I assume it relies upon on the child. My oldest will eat pretty a lot regardless of what I give her, and my youngest is the pickiest eater I have at any time noticed. Rice balls are sooo Japanese, and you can buy little mold thingies to make them into cute little animal shapes and stuff.

Try a couple of these, tried and tested:
Tuna and sweetcorn pasta.
Cook 40g pasta shapes according to the pack. Drain and rinse in cold water. Mix in a half can of tuna in brine, drained, 2 tbsp sweetcorn, 3 cherry tomatoes, halved and 1 tbsp mayonnaise.
Strips of pitta bread are great for dipping so kids love them.
Humous dippers, cut 1 wholemal pitta bread into strips and serve with 1 tbsp humous and sticks of carrot, pepper, and cucumber for dipping.
DIY. Kids love putting thing together themselves, so why not try this fun idea, wrapping the items seperately will keep them fresh.
Ham and cheese crackers,
2 Sesame seed or your fav choice of crackers a slice of smoked ham, 15g cheese thinly sliced, 4 slices of cucumber and a small bunch of grapes, and let them assamble lunch themselves. They will enjoy making faces before they eat them.
Always include a piece of fruit with the lunch menus, and for a treat a mini choc chip cookie or their favourite treat.
