Eating popsicles is never as good as during the summer. Somehow, the warm weather and the sensation of a cold popsicle melting is forever associated with July in my mind. Commercially-made popsicles tend to be loaded with lots of sugar, so let your kids enjoy a more wholesome treat by teaching them how to make their own. Just buy some popsicle molds, or use ice trays for mini-popsicles. I would recommend using silicon trays since they make it easier to take out the popsicles later on.

1. Orange Mango Tropical Delight
Mangoes are definitely a summer fruit, just as oranges are. Create a refreshing tropical delight by mixing together a cup of orange juice, and 2 cups of chopped ripe mangoes. Add about two to three tablespoons of honey for a bit of sweetness and process in a blender until you come up with a smooth mixture. Pour into molds and let freeze.
If you cannot find any mangoes, or would rather not use them, just mix some grenadine to the orange juice and omit the honey. The tartness of citrus juice will make an interesting mix with the sweetness of the grenadine.

2. Vanilla Root beer Popsicles
A root beer float hits the spot during a summer dog day. Up the cooling factor even more by making these yummy vanilla root beer popsicles; if these won’t cool you down, nothing will.

Making these popsicles is a project best left for the older kids, since this is not merely a pour-in type of popsicle. Nonetheless, it is very simple, and even the younger kids could probably make it themselves with a bit of adult assistance.
Start by pouring about 3 cups of root beer in a large mug or a pitcher. Keep this in the fridge for at least 20 minutes. This should flatten the root beer, so it does not foam much when poured into the popsicle molds.

Put one cherry in each compartment of the popsicle tray. Carefully pour enough flat root beer until each compartment is half-full. Spoon in some vanilla ice cream in each compartment, but only add enough to make it about two-thirds full. fill it the rest of the way with more root beer. Skim off any foam with a teaspoon and let it freeze for about five hours.
